Baked Salmon with Vegetables

Indulge in a healthy and flavorful meal with this delicious baked salmon with vegetables recipe.

Tender salmon fillets are perfectly baked, surrounded by crisp asparagus and juicy cherry tomatoes and garnished with tangy slices of lemon. This dish offers a delightful blend of savoury and zesty flavours.

Ingredients:

  • 4 salmon fillets
  • 300g asparagus, trimmed
  • 300g cherry tomatoes
  • 1 lemon, sliced
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Method

Preheat the oven to 200C

Place the salmon fillets in a baking dish. Arrange the asparagus and cherry tomatoes around the fillets.

Drizzle the olive oil over the salmon and vegetables. Season with salt and black pepper.

Place the lemon slices on top of the salmon.

Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.

Serve hot.
