Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Method:

Combine the chickpeas, cucumber, tomato, red onion, parsley, and mint in a large bowl.

In a separate bowl, whisk together the lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the salad and toss to combine. Serve cold
