  • 1 red bell pepper, cut into bite-sized pieces
  • 1 yellow bell pepper, cut into bite-sized pieces
  • 1 onion, cut into bite-sized pieces
  • 1/4 cup olive oil I

For the chicken skewers:

  • 700g boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Wooden or metal skewers

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1 cucumber, grated and squeezed to remove excess liquid
  • 2 garlic cloves, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons lemon juice
  • Salt and black pepper, to taste

In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

Add the chicken pieces to the bowl and toss to coat evenly. Cover and refrigerate for at least 30 minutes to marinate.

Meanwhile, prepare the Tzatziki sauce by combining all ingredients in a medium bowl. Mix well, season with salt and black pepper to taste, and refrigerate until ready to use.

If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent them from burning.

Preheat a grill or grill pan to medium-high heat.

Thread the marinated chicken pieces onto skewers.

Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and browned on all sides.

Serve the chicken skewers hot with the chilled Tzatziki sauce on the side for dipping.
