Lentil Soup

This hearty lentil soup recipe is the perfect blend of savoury flavours and comforting warmth.

Red lentils are simmered to perfection in a delicious broth made from chopped onions, carrots, and celery, and seasoned with a dash of garlic, cumin, and coriander.

The result is a flavorful and nutritious dish that will leave you feeling satisfied and nourished.

Drizzled with a touch of olive oil and seasoned with salt and black pepper, this lentil soup is a simple and delicious way to enjoy a warm and satisfying meal.

Ingredients

  • 1 cup red lentils
  • 4 cups water
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

Method:

Rinse the lentils and place them in a large pot with the water. Bring to a boil, then reduce the heat and simmer for 20 minutes.

In a separate pan, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic, and sauté for 5-7 minutes, until the vegetables are tender.

Add the sautéed vegetables, cumin, coriander, salt, and pepper to the pot with the lentils. Simmer for another 10-15 minutes, until the lentils are completely tender.

Serve hot, garnished with fresh herbs if desired.
